Dairy Free monDay!
PaNcAkEs! A weekend breakfast favorite. The typical recipe is full of refined grains, sugar, dairy and eggs. Those pancakes are not wholesome to fuel your day or your kids day. I'm guessing they aren't going help you be healthy either. There is a solution!
On this Dairy Free monDay I'd like to share my family's favorite pancake recipe. The best part is that my family's pancakes are made with whole grain, are sugar free, plus they are dairy and egg free. All you weekend pancake lovers will now be able to survive your weekends! You'll also have so much more energy from the whole grains and no afternoon sugar slump.
My Family's Favorite Pancakes, CaveChick Style
Makes 4-4” pancakes
¾ cup Whole Grain Spelt flour
1 Tbl. Arrowroot
1 ½ Tsp. Baking Powder, aluminum free
½ cup + 2 Tbl. Unsweetened Almond Milk or Unsweetened Rice Dream
1 ½ Tsp. Olive Oil
1 Tsp. Vanilla, alcohol free
1 Tbl. Honey or Maple Syrup, optional
Mix dry ingredient in small bowl. Add ½ cup Almond Milk, Oil and Vanilla. Stir until blended. Add the additional 2 Tbls. Almond Milk as needed to thin batter to desired consistency. Heat frying pan over medium high heat. Pour batter onto greased hot pan. Flip when edges look firm and slightly browned.
Serving suggestion: Top with unsweetened homemade applesauce or toasted walnuts with real maple syrup.
